Delicious Cauli Fried Rice
Ingredients
- 1 head cauliflower, washed and cut into florets
- 1 leek, sliced
- 2 garlic clove, diced
- 2 Spring onions (shallots), sliced
- 2-3 Tbsp. coconut oil
- A dash of Himalayan salt
- A dash of pepper
- 1/2 tsp. chilli powder (or for an extra bite- 2 fresh red chillies, sliced)
- 1 tsp. curry powder
- 2 tsp. cumin
- 1 tsp. tumeric
- 2 organic eggs
- 1 Tbsp. tamari sauce (healthy gf soy sauce found in the health food section of Coles or Woolies)
- 1 cup salted cashews
- 6 organic chicken thighs, cut into thin strips (optional for added protein but can be left out for a vegetarian meal)
(optional to add any greens of your choice – I particularly like to add chopped bokchoy and fresh coriander)
Instructions
- If using chicken, heat 1 tbsp. of coconut oil in a large frying pan, season chicken with salt, pepper and cumin and cook until browned. Remove from the pan and place in a separate bowl to rest.
- Using the same frying pan, heat some extra coconut oil as needed and fry the leeks, garlic and chilli if using.
- Place the cauliflower florets in food processor and blend until โrice like,โ then add the rice to the heated pan of garlic and leeks. (If you do not have a food processor you can also grate the cauliflower).
- Add salt, pepper, cumin, turmeric, curry powder, chilli powder and the extra 1 Tbsp. coconut oil.
- Add the spring onion and any other green veggies you like, and then create a space in the middle.
- Crack the eggs in the middle of the rice and fry the rice and veggies with the egg. Add the tamari and cook until the cauliflower is golden.
- Plate up. Sprinkle with cashews to serve. Top with an extra fried egg if you wish.
Hi there, Jessica here ๐ This is one of my favourite go to meals. It is quick and easy and super delicious too. A real crowd pleaser in my family. I like to be flexible with the vegies, so sometimes adding kale, ribbons of zucchini or thinly sliced broccoli. I buy the biggest cauliflower I can find, make sure to use a huge pan to make a batch that can last for a few dinners and work lunches. Bulk cooking is a must if you want to enjoy your evenings and free up time in your week for other things that bring you joy xx
P.s. I gained inspiration for this recipe from one of my favourite cook books- Living the Healthy Life by Jessica Sepel. She has a great cauliflower dish in there that I have adapted over time to suit my taste.
